Hello cute tartlets! ♥
Living in another country is a good way to know more about them, in my case, food. I spend quite a time in Malaysia for my study and I started to know more delicious things for my tongue to taste. *gaining weight is worth it, i think* What I eternally love is coconut tart and portuguese tart. Once you take a single bite, both are so adorably magical, believe me.
Because I have some ready-to-use puff pastry in my freezer, I decided to use it and it's really good! Oh, who doesn't love it?
Because I have some ready-to-use puff pastry in my freezer, I decided to use it and it's really good! Oh, who doesn't love it?
Ingredients:
Adequate amount of puff pastry
½ cup (125gr) butter, soften
½ cup (115gr) sugar
2 eggs
½ cup (60 gr) cake flour (you can substitute with 50gr all purpose flour+10gr cornstarch)
1 cup fresh grated coconut (I use 1cup or 93gr desiccated coconut)
¼ cup (60 ml) milk
1 tsp baking powder
Method:
1. Beat butter and sugar until white and fluffy.
2. Add in egg, one at a time
3. Sift in flour and baking powder.
4. Add in designated coconut and mix well.
5. Thaw the puff pastry. I cut them into squares, lightly press it with fingers on the tart tin and fold in the corners.
7. Pour egg mixture into each tart shell. Be careful not to over pour.
8. Preheat oven 190C and bake for 30 minutes or until the tart shell edges are golden brown.
9. Overturn the egg tarts and enjoy :D
